Hey all. If I were to copy the Employee Centre role and save it as a custom role and assign it to employees, does this still count as employee centre or will this need a full license? Thanks in advance.

The custom role will be on the 'Employee centre' centre type, so will only use the employee centre license.

If you assign this role to an employee who already has a Full User license, it will not consume one of your employee licenses as well.
