Can the output path for the sitemap generator be edited? We run multiple sites, so each site sits in Web Site Hosting Files > Live Hosting Files > Site > Sitename. I don't really want the xml to be dumped into the top level folder, as it's discoverable across all sites

Not sure what exactly is going on with your account, but on my test account, sitemaps are generated in Web Site Hosting Files as the top level and then each site has a unique name, with one master file which points to it (or them) eg sitemap_suitecommerce.stevegoldberg.co.uk_Index.xml
With that, I could then go to Google Search Console for that particular domain and tell Google that it lives there
I haven't set it up for multiple sites but I believe we follow Google's recommendations for multi-site: https://developers.google.com/search/docs/advanced/sitemaps/large-sitemaps#manage-sitemaps-for-multiple-sites
So, to answer your question: I don't think it's possible to change the location but there should not be a reason why you would need to, at least based on the reasons you gave
