anyone have first hand experience dissolving a bundle in production that was deployed from a sandbox? Our initial implementation bundle had FAM bundle references in it and NS refuses to support anything there due to the "re-bundle". We're planning to dissolve our bundle to resolve this conflict but cannot do this in a test/safe environment to show any potential impact?

What do you mean dissolving? Are you planning on uninstalling the bundle in prod?
