Estimate forms (Created by customizing from Standard Estimate (External)) do not get used for View mode in Customer Center roles, only in Create mode (there is no Edit mode permission).
I also can't use the customform field or the &cf= url param to force it to the form I want it to view the Estimates with, because the field doesn't exist for Customer Center, apparently.

I’ve used a workflow to hide a ton of fields when the user role is customer center

That works for fields you can’t hide using form customization

Make an action group with trigger of before load and criteria of user role = customer center role(s)
Then in the group put a bunch of set field display type actions for each field and set type to hidden
