Quick question - if we are already using UPS integration do we still need to delete the account and add it again for the OAuth? Just trying to figure out the best way to deal with it.

No, it’s pretty simple. Existing integration profiles will guide you to log in / authenticate using your UPS account credentials.

So after enabling OAuth, do we regenerate the token? The NetSuite article mentions about adding the UPS account. Does that mean we delete the existing account and re-add it? Would be great if you can share the document/process you followed for this one. Also does it need to happen offline with no operational activity?
