Anyone familiar with what fields I need to pull into a Saved Search to be able to display the same information found the Applied To Sublist found on a Payment Transaction. I am trying to build a Search that Captures the Due date of an Installment and when the Payment was applied to it, but all I can return is the Invoice data and not the Installments.

You can try applying and applied to transactions see what that gives you.

I don't know that I understand exactly what you are needing to pull in but I created a search this morning pulling those applied to transactions fields. Have you tried the Paid Transactions Fields.... to see if it gets what you need?
