The resource who was taking care of the SuiteCommerce website left. I've been told to change the email address on the website I went on the dealer website, click on ESC, logged in, click on edit, I see the section behind enabled, I see the area of what I want to change I click in the area but I cannot edit. Any idea what it could be ?

Without knowing the specifics of your website, it is entirely possible that the email that's displayed on your website is stored in the configuration record and not the CMS.
