How to define a Workflow to run on VOIDing a transaction? When a transaction is voided (and only in that case) I want to send an email... I don't see "VOID" as an option in the condition, or the event types, etc.

Maybe make a saved search of voided transactions and use a email from saved search? Or use that search to trigger a scheduled workflow?
