The problem I’m running into is that I’m using a Suitelet, and setting certain properties for a field depending on it’s display type.

If it's a suitelet then didn't you make the fields in the suitelet? I would default them when you create the field or make some type of page-like object that you use to create the field and have an extra property you can read from later.
