Has anyone had any issues setting the undeposited field on Cash Sales? Seems like nothing is wanting to set it... works fine in the UI but trying to set it in script using "T" (true does not work) is going nowhere.

Make sure that the payment method used is setup to group with undeposited funds.

NetSuite Support determined this is a defect in SuiteScript 2.0. The equivalent SuiteScript 1.0 code works as expected.
