Is it possible to set Field Text instead of Field Value using record.submitFields ??

No, what would be the use case for doing that.

I think the use case would be performance and probably less usage units. Would be nice if that was an option. Like if you wanted to change the sales rep by only using the name. Maybe if it was from an outside system
