Hi everyone (I am not sure it is a suitescript question). I would like the user to be able to create a new record (custom one) through the employee center. Do you have any idea how I could do that ?

I think you have to create a new Center Tab and Center Link Customization section and reference the custom record. You associate the Center Tab with the Employee Center.
