When the "Hide In SuiteBundle" option is selected, NetSuite says "User cannot view, edit, or download the script file" in their documentation. If I stumbled upon a way to view these "hidden" files, is that a major red flag, or does NetSuite only promise to hide the contents of these files when users are attempting to view them via the File Cabinet UI? I thought that this would provide better security around my bundle's scripts...

I've raised this issue with NS. There's a pretty easy way to see te files, which is a bit concerning!

Are you sure about this?  You can see the file record, but not the contents of the file itself.

<@U7XBU8Y3B> Yes, there appears to be a way to view them (and confirmed this is the case across multiple NS/3rd party bundles). The SDN team is looking into the question.
