All of my matrix items on my SuiteCommerce website are showing CAD as the currency, but it is pulling the USD rate for US customers. The Site Settings are set to Currency USD. When it was added to the website, it definitely was not showing CAD as the currency for US customers. In our sandbox, we are showing the correct USD currency sign for those items. No other items on the live website has this issue. What could be the cause of this? Images attached

Not sure I follow exactly. Are you saying that when a US customer logs in to your site they see the USD price when you want them to see a CAD price?

So when a US customer logs in, the actual # shown in the USD price, but they are seeing CAD as the currency sign instead of $
When a CAD customer logs in, they see the CAD currency symbol and the CAD rate. When in sandbox, the US customer sees the US currency symbol and the US rate as expected.

I have seen that issue before. Are you using SC or SCA? (And if SCA, what version?)

OK, have you checked all of the multi-currency settings are set up correctly, such as assigning a currency to the domain the Hosts section of the config record?

I double checked the steps from this NS article (ensured it was enabled, we have a currency set on the subsidiary, we have a subsidiary with the website) and all those settings are set up - but there is nothing set up on the Hosts section of the config record.

So, normally, setting up the Hosts array is needed for multi-language but we had some bugs recently that affected multi-currency and so I think the behaviour was changed https://docs.oracle.com/en/cloud/saas/netsuite/ns-online-help/section_3830019370.html#subsect_1521837231
Assuming you only have one domain, could you set up the Hosts array so that your domain includes entries for both USD and CAD?
Then log out of your customer account and clear the cache and log back in
