Is there a standard way to delegate approvals to someone else when a user goes out on vacation? I hear this request often, but don't believe I have discovered a good way to do it, other than an Admin having to go in and change the approver on the employee record temporarily and then remember to change it back when they are back.

There is an NS add-on that can be purchased to do that. Contact your NS AM. 🙂

Our approval routings are made with Workflows. We show the
Approve
button to the user that matches the
Next Approver
field and also show the button to the Supervisor of that user. I was tempted to use a customization with a
Backup Approver
in the employee record, two custom
date
fields to set the Out of Office and a scheduled script to assign/unassign approvers. But so far the original solution is Ok and the second seems overkill.

Yes I’ve done similar to what @Edgar Valdes described. Usually showing the buttons to the next approver and their supervisor covers 90%. I’ve also done a quick scheduled workflow so anytime the next approver is “out of office” then it updates the next approver to their delegate. It works fairly well and was simple to setup. Then I didn’t have to mess with the regular PO approval WF only add this supplemental one to change the one field then email the delegate
