Anyone know how to generate a 'hostkey' using a Mac?  I'm struggling

I think there's a suiteanswer for it isn't there? I suspect you should be able to use any *nix related approach?

do something like `ssh-keyscan <http://the.host.com|the.host.com>` and take the hostkey from the output
