The idea is to have a potential client install a bundle, the bundle will inject custom fields into existing customer records (leads) and any new records that are created

I haven't had a chance to dynamically create a custom field and apply it on a standard record. You could do a quick test and see if it will work. If it does then bundle installation script is indeed the right path.
