Hello - There are some JEs that won't let me edit the Entity (line) details (it's grayed out). Any idea as to why that might be happening?

Have you applied a payment on this JE ?
If yes you have probably a currency revaluation on this JE 
Delete CR and you can edit the name 

Create saved search on this JE , check if you have something in result with applied to transaction , applying transaction 

When you have a currency revaluation you cannot see on the related record of your JE
Check with saved search , or check if the account of your JE are revalued

On a similar note, how do I edit "Name" for Book Specific JEs?

Juste in criteria use the ID of your JE
in result remove all the field and use applying transaction , applied to transaction

And check if the account used in your JE are revalued every month
