I found the Help page about

column.function

and it looks like it will offer me the effect I want. But their examples of use are not inline with what I've been doing so far [see snippet] and I'm still new enough that mixing these styles is wrecking my head. I tried adding a

function: 'ageInDays'

to the column info but it doesn't seem to help. Any further guidance appreciated.
