On the customer record, the "Status" (i.e. "CUSTOMER-Closed Won") is required on the form. When I try to customize the form, I am unable to remove the mandatory checkbox for this field, although I can modify other fields. Is there another company setting that enforces this requirement? Thank you

yeah, default, but it were not needed, one could uncheck the mandatory status. do it at your own risk…

but in any case in this field, there is a value that is set

if it is…. not blank. could just set value via WF..

Just in case the requirement is necessary in the system, you could just create a dummy default status and use that in a workflow. Easiest solution.
