I created a "Save & Email" button using a workflow, but I don't want the button to remember my selection next time I load the record. Is there a way to either make it it's own button instead of part of the menu, or reset the "remembered" choice?

It's difficult to answer without more details. You may be able to use a transition that will move it to a different state or the starting state after pressing it.
