I have different project statuses (accounting list) that I want to apply to different project forms. How do I do this? Seems like if I add it to the accounting list under project status it just adds to the entire list.

If I understand the desire; one form = one status, you would have to create a workflow that sets the value of the status based on the form and then makes the project status field inline so as to disable editing.
