Hello! Is it possible to add a field to the location sublist?

what do you mean by location sublist? You can add custom field to location records. Customization>lists, Records & Fields>Other Record Fields

Or do you want a field for the Item at the location sublist? If you have Advanced Location Configuration turned on then yes you can.
