Are we able to make a custom entity field available for inline edit or only specific fields are alloowed?

Custom fields are available for inline edit as long as they aren't sourced or otherwise restricted.

Well - A drop down field that is a list of custom records would work

a drop down field that is coming from a custom record selected from a field on the custom record wouldn't

You *could* turn off sourcing and then do a workflow/script to imitate the sourcing to allow override via inline edit
