We have not worked with cash sales before, But now we shall. We don't have an integration to our webstore (so few transactions there). So, for the order to transform to a cash sale, we need a payment method. But we need that payment method without any logic, beside from it to generate a cash sale instead of an invoice. Is there anything to think about when creating that payment method? Or is there a better way to handle this?

Are your orders coming in pre-paid then turning into a cash sale? or are you capturing the funds when it ships? any more details on the order flow you can share?

Just set up a payment method with "Offline" as the type.

No settings on the payment method?

We use one which just has type set to offline and the "Deposit to Account" set.
