RE: COGS for Non-Inventory Items: NetSuite does not appear to provide the option of assigning COGS as an Expense account in the Item setup for non-inventory items, for instance, a Non-Inventory Item for Resale. What do companies normally do to assign a COGS account to such an item?

We do this all the time - maybe toggle to all selectable account types in the dropdown?

There's an accouting preference "expand accounting lists"
in theory it is discouraged to use it - however, I don't think I've ever seen a client who didn't have to turn it on for some reason

So it worked in my demo account, but in the client's account, they don't have the chevrons to expand the list. Is that a setting that has to be engaged?
I think I found it in Accounting Preferences > General. There's a checkbox for expanding accounting lists.

The chevrons thing is dicated by the number of results.
in comparison to your "number of lists in drop down" preference
