I am an admin and I need to edit a custom field that was created by a former employee and is “locked” , how do i fix this?

If its locked it would be because it was added via a bundle install? Otherwise you can change it as an admin

This is actually a big part of why I don't lock bundles moving from sandbox to production because when sandbox is refreshed you can't unlock the fields
You might be able to dissolve the bundle if it's from your own account, but I am unsure if that will fix the fact that the field is locked.
