Hello! Trying to track down a bug that came up today. In customer records there is the shipping method (ship item field) which appears to overwrite the inventory item shipping method. I do not have a clear view as to HOW the customer record determines what the default shipping method is (it's not included in the system information/not audited in the customer record). Is shipping method in the customer record just determined based on that customers first order? (so if customer order's freight in the first order, then all future orders default to freight?)

Customer can have default shipping method which carries over to sales orders, if customer wants to change the shipping method permanently you can update the customer record, if they change per transaction or only for a particular transaction you can change that on sales orders or while doing item fulfillment

default shipping methods are setup under Setup --> Accounting --> Setup Tasks --> Shipping. Most likely what is driving the shipping you mention.
