10/06/2021, 4:03 AM@Stuart Anderton my apologies. I was thinking it was going to be similar to "Priority" as on Cases. To make amends one solution is for you to set the "DEFAULT ORDER PRIORITY" on your Customer records. That value will then default onto the Sales Order line. Refer SA32364 which I think is going to resolve this for you.
