Is there a way I can mass convert non-inventory items to inventory items? I know there is a button on each item record but I have hundreds of items.

Could always inactivate your current non inventory items and import new inventory items via CSV

Of course - all your existing transactions will have issues, and you lose over time comparisons.

But you have one of those problems anyways.
