We copied prod to Sandbox. When we update a Sales Order in Sandbox, it stop it because of Avalara. How can I turn Avalara off ?

Go to the scripted records page and shut off any Avalara script would probably be easiest.

There is an option in the Avalara setup to turn off tax calculation.
