How can I disable/hide Item Options? We don't use them at all but I can't hide/remove the "Item Option" field from Item records, or any sublists of items

You can 'hide' it from item sublists on transactions by clearing out the label on the form setup. Even though the 'show' box will still be checked, the field shouldn't display in the sublist.

I actually found the setting- Setup > Company > Enable Features Under the SuiteCloud tab, uncheck the "Item Options" checkbox

Oh yeah, that'll work too. The label trick can be helpful for other fields if you want to hide a field from displaying but still be available for client scripts to access (particularly relevant, if I'm remembering correctly from my own experience, for sourced, non-stored fields). Probably a pretty niche use-case though.
