Which is the best way to move workflows from the sandbox account to the production account? Manually recreate? Bundling (I am concerned about accidentally overwriting something)?

If it is a copy of PRO and possible references to fields or records already exist in PRO, the easiest way is to use the Copy To Account option. If you have to upload new fields, records, searches... related to the WF, you create a bundle and dissolve it when you finish.

Copy to Account is finicky though especially with workflows. Eveytime I try using it, 90% of the time I get an Unexpected Error but when it works it was seamless

So just use copy account? If it fails, then just manually recreate the WF?

If all the related objects (fields, records...) exists in PRO, yes manually.
