Our kit items are showing in stock when components are actually out of stock. Has anyone else had this happen? Seems like it's a new issue.

Kit/Package item types don't have quantities available / on hand etc. You're sure it's a kit item?

Yes it's definitely a kit item. Users are able to add to cart and flow through checkout even though one of the components is out.

Are you running into it with multiple kits? I'd look at the "DISPLAY COMPONENTS ON TRANSACTIONS" checbox on your kit. Perhaps if it doesn't list out the components then NS won't throw the error that one is out of stock?
