On item record subtab accounting I can select only Expenses Accounts. The Cost of Goods Sold are not showing, why is this?

what is the item type and subtype? I would assume you have selected an item subtype of For Purchase

Non Inventory items will not have COGS. Only Inventory or Assembly Items.

You need to turn on the Expand Accounts Lists on Accounting Preferences page if you want to show the COGS there.
